The Spanish-style cod comes from the Spanish influence that remained in Mexico after the Colony. This originated in the Bilbao region, specifically in the community of Vizcaya , from which it takes its name (Bacalao a la Vizacaína). Later, they took this recipe to Mexico, where it was mixed with native customs and ingredients.
